Balblair Distillery
Edderton, Scotland
Established in 1790 by John Ross on the estate of the Rosses of Balnagown, overlooking the Dornoch Firth at Edderton. The site claims to be the oldest distillery in that part of Scotland and uses Black Isle barley with water from the Edderton Hills in squat-neck pot stills. Official process notes include a long fermentation and very slow distillation; visitor tours and a shop are offered.
