Dornoch Distillery

Founded by brothers Phil and Simon Thompson at Dornoch Castle Hotel as Dornoch’s first whisky distillery, aiming to revive older distillation styles. The first Dornoch new-make was laid to cask in 2017; the team also runs independent bottlings and Organic Mediterranean Gin. A bottle shop operates at Station Square, Dornoch; planning permission for a larger carbon-neutral “Dornoch South” distillery was granted in 2023.
