    Ardross Distillery

    Alness, Scotland

Northern Highlands distillery on a restored 19th-century farmstead, drawing process water from Loch Dubh behind the distillery. Official materials describe unusually long fermentations of about 120 hours in Douglas Fir washbacks, and tall copper stills with reflux balls on both wash and spirit stills. The signature profile is intended as an unpeated, sweet and fruity Highland spirit, with peated runs also produced.
